About the Role
As our Casual Mixologist & Floor Staff Member, you'll play a key role in delivering an exceptional evening dining experience. This is a dual-role position combining high-level cocktail making with premium front-of-house service.
You'll confidently manage the cocktail bar during busy services while also supporting the restaurant floor by greeting guests, taking food and beverage orders, serving meals and drinks, recommending wines and cocktails, and ensuring every customer leaves with an outstanding experience.
We're looking for someone who is proactive, personable and thrives in a fast paced hospitality environment. You should be equally comfortable behind the bar or on the restaurant floor, always willing to jump in wherever needed to support the team and deliver exceptional service.
Key Responsibilities
Cocktail & Bar Service
- Prepare premium cocktails, wines, beers and spirits to an exceptional standard.
- Confidently manage a busy cocktail bar independently during service.
- Deliver drinks with speed, consistency, and attention to detail.
- Ensure every beverage leaving the bar meets Volume One quality standards.
- Recommend cocktails, wines and premium beverages to guests.
- Maintain an organised, clean and fully stocked bar throughout service.
- Complete opening and closing bar procedures.
- Ensure responsible service of alcohol at all times.
Restaurant Floor Service
- Welcome every guest with genuine, friendly hospitality.
- Seat guests and explain the menu when required.
- Take accurate food and beverage orders.
- Deliver food and drinks professionally and efficiently.
- Build genuine connections with guests throughout their visit.
- Recommend menu items, cocktails, and wine pairings.
- Monitor guest satisfaction and respond to requests promptly.
- Clear, reset and maintain tables to a premium standard.
- Process payments accurately.
- Ensure every guest leaves having received an exceptional dining experience.
Cocktail Development & Creativity
- Assist in creating seasonal cocktail menus.
- Develop signature cocktails that reflect the Volume One brand.
- Stay up to date with global cocktail trends and premium spirits.
- Bring fresh and creative beverage ideas to the team.
- Participate in tastings and menu development sessions.
Bar Operations
- Prepare the bar before each service.
- Ensure garnishes, syrups, glassware, and ingredients are fully stocked.
- Monitor stock levels throughout service.
- Assist with stocktakes and inventory management.
- Report ordering requirements to management.
- Maintain exceptional cleanliness and organisation behind the bar.
- Ensure all equipment is cleaned and maintained correctly.
Customer Experience
- Deliver genuine, engaging, and memorable hospitality.
- Build relationships with regular customers and local guests.
- Create a welcoming atmosphere that reflects the Volume One brand.
- Handle guest feedback professionally and confidently.
- Consistently exceed customer expectations.
Teamwork
- Work closely with chefs, baristas, and front of house staff.
- Support the team wherever required during service.
- Communicate effectively across all areas of the venue.
- Contribute to a positive, energetic, and professional workplace culture.
- Lead by example through professionalism, teamwork, and work ethic.
Essential Experience
You Must Have
- Minimum 2–3 years' experience working in premium cocktail bars, restaurants, or hospitality venues.
- Previous experience working in a fast-paced, high-volume environment.
- Confidence managing a busy cocktail bar independently.
- Strong knowledge of classic and modern cocktails.
- Excellent wine, beer, and spirits knowledge.
- Previous restaurant floor service experience.
- Outstanding communication and customer service skills.
- Ability to multitask under pressure while maintaining quality.
- Current NSW RSA Certificate.
- Full Australian working rights.
