Lead Our Kitchen in Paradise!
Mantarays Ningaloo Beach Resort is seeking a passionate and experienced Head Chef to lead our kitchen team and shape the culinary experience for our guests.
As Head Chef, you will take ownership of all kitchen operations, setting the standard for quality, consistency and creativity. You’ll play a hands-on leadership role while managing reporting, compliance and operational oversight to ensure the kitchen runs efficiently and profitably.
What You’ll Do
As Head Chef, you will be responsible for the overall success of the kitchen, including:
Leading and managing all aspects of kitchen operations and service
Delivering menus that reflect seasonal availability, local produce and guest expectations
Maintaining exceptional standards of food quality, presentation, hygiene and food safety
Managing ordering, stock control, supplier relationships and cost management
Minimising food wastage and managing budgets in line with business targets
Preparing and maintaining kitchen reports, including:
Food cost and wage cost reporting
Stock usage, wastage and variance reporting
Compliance, food safety and WHS documentation
Ensuring accurate record-keeping for audits, inspections and management review
Recruiting, training and mentoring kitchen staff to build a positive, high-performing team
Rostering kitchen staff in line with business needs and labour budgets
Working closely with resort management and front-of-house teams, providing clear communication and regular operational updates
Maintaining a clean, organised and efficient kitchen environment
What We’re Looking For
We are looking for a Head Chef who brings leadership, creativity and strong operational discipline, including:
Proven experience as a Head Chef in a hotel or resort environment
Strong knowledge of modern cooking techniques, menu development and kitchen operations
Experience with food cost control, reporting and kitchen administration
Excellent leadership, organisation and communication skills
Ability to work calmly under pressure in a fast-paced service environment
Sound understanding of food safety, hygiene, WHS and compliance requirements
Trade qualification in Commercial Cookery (Certificate III or higher)
Flexibility to work weekends, public holidays and peak resort periods
