We are looking for an experienced Sushi Chef / Sushi Roll Maker to join our back-of-house team on a casual basis.

Availability: Minimum 20+ hours per week
About the Role
As a Sushi Chef, you'll be responsible for preparing high-quality sushi and sashimi, as well as specialty rolls for both our sushi train and à la carte service. You must be able to work efficiently in a fast-paced environment while maintaining high standards of hygiene, presentation, and consistency.
Key Responsibilities
- Prepare and present sushi, sashimi, nigiri, maki, and specialty rolls to standard
- Ensure freshness, quality, and proper storage of all seafood and ingredients
- Monitor stock levels and communicate with kitchen management for ordering
- Set up and maintain sushi station before, during, and after service
- Assist with prep duties including cutting fish, cooking and seasoning rice, and preparing fillings and garnishes
- Follow food safety and hygiene standards at all times
- Collaborate with the kitchen team to maintain smooth workflow
- Support in training junior staff or kitchen hands when needed
Requirements
- Minimum 1 year experience in a sushi chef or sushi roll maker role
- Strong knife skills and understanding of sushi preparation techniques
- Good understanding of Japanese ingredients, sauces, and presentation
- Able to work under pressure and maintain speed and quality
- Understanding of food safety guidelines
- Intermediate English communication skills
- Punctual, reliable, and able to work well in a team
- Experience in modern Japanese restaurants is highly regarded
