Mala Town is a modern and vibrant Chinese restaurant located in the heart of Hyde Park. Following a full renovation earlier this year, we are proudly focused on delivering authentic hot pot and Chinese stir-fry cuisine, with an exciting expansion dishes.
As our menu and operations continue to grow, we are seeking a skilled and passionate Restaurant Manager to join our dedicated team and contribute to our ongoing success.
Key Responsibilities
· Plan, organise and oversee the daily operations of the Chinese hot pot restaurant to ensure efficient and profitable business performance.
· Manage restaurant staff, including recruitment, training, rostering, performance monitoring, and supervision of front-of-house employees.
· Ensure high standards of customer service and promptly address customer enquiries, complaints, and feedback.
· Monitor food quality, presentation, and service standards to maintain customer satisfaction and compliance with company policies.
· Monitor ingredient freshness and quality, particularly for seafood, meats, and specialty imported products.
· Coordinate with kitchen staff to ensure smooth food preparation and service during peak trading periods.
· Maintain adequate stock levels of food, beverages, ingredients, and restaurant supplies, and arrange purchasing from approved suppliers.
· Monitor inventory and control costs, including food costs, labour costs, and operational expenses.
· Ensure compliance with food safety, hygiene, workplace health and safety, and liquor licensing regulations.
· Develop and implement marketing and promotional activities to increase customer patronage and restaurant revenue.
· Prepare sales reports, budgets, and financial records, and monitor restaurant performance against business objectives.
· Manage reservations, seating arrangements, and customer flow to maximise operational efficiency.
· Ensure all restaurant equipment and facilities are properly maintained and arrange repairs when required.
· Liaise with suppliers, contractors, and service providers to support restaurant operations.
· Implement and maintain company policies, procedures, and quality standards.
· Oversee cash handling, point-of-sale transactions, banking procedures, and end-of-day reconciliations.
· Conduct regular staff meetings and training sessions to ensure consistent service delivery and operational excellence.
· Supervise the preparation and service of hot pot broths, meats, seafood, vegetables, and specialty ingredients in accordance with restaurant standards.
· Coordinate seasonal menu updates and promotional hot pot offerings based on customer demand and market trends.
· Manage large group bookings, family gatherings, and special events commonly associated with hot pot dining.
Qualifications & Experience
- Minimum Diploma of Hospitality or equivalent qualification
- At least 1 years’ experience as a Restaurant Manager in a similar cuisine environment
- Strong knowledge of Chinese hot pot restaurant operation
- A passion for Asian culinary culture and commitment to delivering quality food

As our menu and operations continue to grow, we are seeking a skilled and passionate Cook to join our dedicated team and contribute to our ongoing success.
Key Responsibilities
- Plan, prepare, and cook a wide range of Chinese hot pot broths, sliced meats, dipping sauces, vegetables, tofu items, and side dishes, as well as select dishes including tempura and teppanyaki.
- Prepare and cook soup bases (e.g., mala, bone broth, tomato broth)
- Ensure precise preparation and presentation of fresh ingredients for hot pot service, including portioning, slicing and plating according to quality standards.
- Follow strict food safety and hygiene protocols, especially in the handling and storage of raw seafood and meats.
- Train and support kitchen staff in Asian culinary techniques, workstation setup, and safe food handling.
- Control food portions and minimise waste to maintain efficient and cost-effective kitchen operations.
- Operate and maintain commercial kitchen equipment including induction cookers, soup warmers, deep fryers, and meat slicers.
Qualifications & Experience
- Minimum Certificate III in Commercial Cookery or equivalent qualification
- At least 1 years’ experience as a Cook in a similar cuisine environment
- Strong knowledge of Chinese hot pot cooking techniques
- A passion for Asian culinary culture and commitment to delivering quality food

- Collaborate with the Head Chef on menu development, new dishes, and improvements to enhance customer experience.
- Operate and maintain commercial kitchen equipment including induction cookers, soup warmers, deep fryers, and meat slicers.
Qualifications & Experience
- Minimum Certificate III & IV in Commercial Cookery or equivalent qualification
- At least 2 years’ experience as a Chef in a similar cuisine environment
- Strong knowledge of Chinese hot pot cooking techniques
