About Your Role:
- Service Excellence
- Oversee daily restaurant operations to ensure smooth and efficient service.
- Greet and look after guests with warmth, professionalism, and refined Japanese dining etiquette.
- Manage reservations, seating arrangements, and special requests to optimise the guest experience.
- Handle customer concerns and feedback with tact, ensuring high levels of satisfaction.
- Team Leadership & Development
- Lead, support, and motivate the FOH team to maintain high service standards.
- Provide training in fine dining service, Japanese cuisine knowledge, and sake/wine etiquette.
- Act as a role model, inspiring professionalism and teamwork.
- Operational Management
- Coordinate with kitchen staff to ensure accurate order management and smooth communication.
- Supervise shift operations including opening, service flow, and closing procedures.
- Ensure compliance with RSA, health, and safety standards.
- Customer Experience & Events
- Build strong rapport with regulars and VIP guests, providing a personalised dining experience.
- Assist in organising sake tastings, pairing dinners, and special promotional events.
- Deliver clear explanations of premium Japanese sake, wine, and cuisine to guests.
- Inventory & Financial Oversight
- Monitor and manage FOH stock levels (wine, sake, spirits, consumables).
- Work with suppliers to source premium sake and ingredients.
What We Are Looking For
- Proven experience in managing a restaurant (fine dining or Japanese cuisine preferred).
- Strong leadership, communication, and interpersonal skills.
- Fluent English; knowledge of Japanese language/culture a plus.
- Organised and detail-oriented, able to multitask in a busy environment.
- Passionate about hospitality, with deep appreciation for Japanese cuisine, fish types, wine, and sake.
- Ability to inspire, train, and develop a diverse FOH team.
