Bertas is a busy deli in Marrickville focused on quality, fresh made-to-order sandwiches, baked goods and coffee. We run a tight, fast-paced operation and work with some of the best suppliers we can get our hands on.
We’re looking for a Head Chef to take full ownership of the kitchen - someone who can bring structure, lead a small team, and deliver consistently excellent food, day in, day out.
This role suits someone who enjoys busy services, sandwiches, and running a clean, organised kitchen.
WHAT YOU’LL BE DOING:
- Leading a small, tight BOH team through high-volume service
- Owning kitchen structure, systems, and day-to-day operations
- Driving consistency across all food - prep through to service
- Managing prep, sections, and workflow to keep service sharp
- Ordering, stock control, and maintaining strong supplier relationships
- Managing food cost and minimising waste
- Rostering and keeping labour in check
- Maintaining high standards of cleanliness, organisation, and food safety
- Working closely with management to continually improve and evolve the operation
WHAT ARE WE LOOKING FOR:
- Proven experience running a busy kitchen (Head Chef or strong Sous)
- Comfortable in high-volume, fast-paced environments
- Strong leadership - able to set standards and hold people accountable
- Organised, reliable, and detail-focused
- Calm under pressure and solutions-driven
- Good understanding of food cost, labour, and kitchen fundamentals
- A genuine love for sandwiches and quality produce
- Someone who takes pride in running a tight kitchen
