FABIO CONCAS t/a Acqua e Sale, an authentic Italian restaurant in Perth, is seeking an experienced and passionate Sous Chef to join our kitchen team on a full-time basis.
The successful candidate will work closely with the Head Chef and play an important role in maintaining the quality, consistency and authenticity of our Italian cuisine.
Key Responsibilities
- Assist the Head Chef with the day-to-day operation of the kitchen.
- Prepare, cook and present high-quality Italian dishes in accordance with restaurant standards.
- Supervise and coordinate kitchen staff during service.
- Assist with menu planning and the development of seasonal dishes.
- Monitor food quality, portion control and presentation.
- Manage food preparation and ensure efficient workflow during busy services.
- Assist with ordering, stock control and inventory management.
- Monitor food costs and minimise wastage.
- Train and supervise junior kitchen staff.
- Ensure compliance with food safety, hygiene and WHS requirements.
- Maintain a clean, organised and professional kitchen environment.
- Step into the Head Chef's responsibilities when required.
Skills & Experience
The successful candidate will ideally have:
- Relevant commercial cookery qualifications or equivalent experience.
- Demonstrated experience working as a Chef/Sous Chef in a busy commercial kitchen.
- Strong knowledge of Italian cuisine, ingredients and traditional cooking techniques.
- Experience supervising and coordinating kitchen staff.
- Strong organisational and time-management skills.
- Ability to work effectively under pressure.
- High standards of food quality, presentation and hygiene.
- A genuine passion for Italian food and hospitality.
