Letra House is a 50-seat late-night wine bar tucked away in a cobblestoned Kent Street laneway, below Italian diner Palazzo Salato. Named after the building’s former identity, “Letraset House,” the venue is a spiritual successor to the beloved La Salut in Redfern.
Our wine list is a tight, rotating selection of around 50 bottles, all available by the glass, showcasing wines made with integrity from Australia, Europe and beyond. Executive chef Scott McComas-Williams delivers a fun Spanish-influenced tapas menu featuring dishes like duck leg croquettes and manchego custard doughnuts, with a late-night menu keeping things interesting after the chefs go home
As a Supervisor at Letra House, you’ll be the right hand to our management team and a mentor to our service staff. You’ll oversee daily operations, uphold quality and service standards, and step in to solve challenges with a calm, guest-first approach. Lead and motivate front-of-house staff during shifts, including servers, hosts, and bussers
Ensure exceptional guest experiences by modeling and enforcing service standards
Handle guest inquiries, feedback, and minor conflicts with professionalism and warmth
Assist with opening/closing procedures, cash handling, and daily reporting
Coordinate table flow, reservations, and event seating to maximize efficiency
Support training and onboarding of new team members
Monitor cleanliness, safety, and compliance with health codes
Communicate staffing needs, maintenance issues, or supply shortages to management
Step into any front-of-house role as needed during busy periods
1–2 years of supervisory or team lead experience in a restaurant, café, or hospitality setting
Genuine passion for service and creating memorable guest moments
Strong communication, problem-solving, and organizational skills
Ability to stay composed and positive under pressure
Basic proficiency with POS systems and reservation software
Flexible availability, including evenings, weekends, and holidays
Knowledge of Spanish food, wine and cuture are highly valued
