About You
You will be responsible for making highest quality sourdough bread products from daily production orders in accordance with recipes.
Core Duties and Responsibilities:
- Check the quality of raw materials and accurately weigh ingredients for production runs.
- Mix, knead, mature, cut, mould, and shape dough to prepare high-quality bread loaves, rolls, and specialty baked goods.
- Coordinate the exact forming, loading, baking, unloading, de-panning, and cooling of consecutive batches of bread and pastry products.
- Monitor oven temperatures and the visual appearance of products meticulously to determine optimal baking times.
- Operate and maintain commercial equipment and machines used to roll and mould dough.
- Prepare pastry fillings and execute glazing or decoration techniques on finished buns and baked goods.
- Maintain extreme cleanliness of equipment and baking premises prior to production runs to ensure strict compliance with workplace health, safety, and food hygiene regulations.
Required Skills, Qualifications, and Experience:
- An AQF Certificate III in Retail Baking (Bread or Combined) or equivalent international qualification.
- Minimum of 3 years of proven full-time employment experience as a qualified Baker.
- Strong understanding of food safety procedures, mass recipe scaling, and commercial oven operations.
- Ability to work flexible hours, including early morning shifts, weekends, and public holidays as required by baking production schedules.
