Baillie Hill is a landmark hospitality precinct in the heart of East Victoria Park, bringing together multiple food, beverage and entertainment experiences in one unique destination.
With a busy, high-volume operation across multiple kitchen areas, we’re looking for an experienced Senior Sous Chef to join our culinary leadership team.
The Role
As Senior Sous Chef, you’ll work closely with our Executive Chef, Head Chef and wider culinary leadership team to support the day-to-day operation of our kitchens.
Our food operations span two onsite kitchens and a dedicated pizza kitchen, creating a varied and fast-paced environment. You’ll provide hands-on leadership across these areas, helping ensure our teams deliver consistently high standards of food, service and kitchen operations.
This is a senior, hands-on role for an experienced chef who is confident leading busy services, developing teams and supporting the broader management of a large-scale hospitality operation.
Key responsibilities include:
- Supporting the Executive Chef and Head Chef with the day-to-day management of kitchen operations
- Leading busy, high-volume kitchen services and ensuring consistent execution
- Providing leadership and operational oversight across our kitchen areas, including the dedicated pizza kitchen
- Leading, training and mentoring chefs and junior kitchen team members
- Maintaining high standards of food quality, presentation and consistency
- Assisting with ordering, stock control, food costs and waste management
- Ensuring food safety, hygiene and workplace standards are consistently maintained
- Supporting menu development, specials, functions and event activations
- Working collaboratively with FOH and venue management to deliver smooth service across the precinct
- Taking on broader kitchen leadership responsibilities as required
About You
You’re an experienced kitchen leader who knows how to keep things moving when service gets busy. You’re organised, reliable and confident leading a team, while still being willing to jump on the tools and lead from the front.
You’ll bring:
- Proven experience as a Sous Chef or Senior Sous Chef in a busy, high-volume hospitality environment
- Strong kitchen leadership and people management skills
- Experience coordinating service and teams across multiple kitchen sections or operations
- Excellent organisation, communication and time management
- A passion for quality food and consistent execution
- Sound knowledge of food safety, hygiene, stock control and kitchen operations
- The ability to remain calm, adaptable and solutions-focused under pressure
- Availability to work a rotating roster including nights and weekends
- Food Safety Supervisor Certificate
- Full Australian working rights
