Raffy Group Pty Ltd, trading as Xiao Long Kan Adelaide, operates an established Sichuan-style hot pot restaurant located on Gouger Street, one of Adelaide’s premier dining precincts. We are committed to providing an authentic Sichuan hot pot and traditional Sichuan cuisine dining experience, with a wide selection of quality broths, fresh ingredients, prepared dishes, sauces and traditional accompaniments.
We are seeking a skilled and reliable Cook to join our kitchen team. The successful candidate will be responsible for preparing and cooking menu items in accordance with the restaurant’s recipes, cooking methods and presentation standards, maintaining consistent food quality and portion control, and supporting safe and efficient kitchen operations during both preparation and service periods.
About the Role
This is a full-time Cook position. The Cook will work closely with the Chef and other kitchen team members in a fast-paced commercial kitchen and will be responsible for assisting with the preparation and cooking of Sichuan-style hot pot and other menu items. The successful candidate will also be expected to maintain high standards of quality, consistency, hygiene and food safety. Evening, weekend and public holiday work will be required according to the roster.
Key Responsibilities
- Inspect meat, seafood, vegetables, dry goods and other foodstuffs on receipt and before preparation to confirm freshness, quality and suitability for service.
- Prepare and cook hot pot broths, sauces, accompaniments and other menu items in accordance with approved recipes, portion specifications and presentation standards.
- Operate and regulate stoves, ovens, grills, fryers and other commercial cooking equipment, monitoring cooking times and temperatures to achieve consistent results.
- Wash, cut, marinate, season, portion and arrange ingredients for hot pot and other Chinese dishes, including meat, seafood and vegetables.
- Taste and season food during preparation and cooking, and check completed dishes and ingredients for flavour, temperature, appearance and portion consistency.
- Plate and present cooked dishes and prepared ingredients, adding sauces, garnishes and accompaniments as required.
- Store food and ingredients correctly in temperature-controlled facilities, rotate stock using appropriate date-labelling procedures, and minimise spoilage and waste.
- Prepare food for customers with allergies, intolerances or other dietary requirements in accordance with instructions and food-safety procedures.
- Maintain clean and sanitised workstations, utensils and cooking equipment, and comply with the restaurant’s food-safety program, workplace health and safety procedures and relevant regulatory requirements.
- Monitor ingredient usage and advise the Chef of stock requirements; assist with estimating food quantities and preparing kitchen mise en place for expected service volumes.
- Coordinate with other kitchen team members and front-of-house staff to ensure orders are prepared accurately and delivered within service timeframes.
- Assist with the induction and on-the-job training of junior kitchen staff and kitchen hands when required.
Requirements:
- Minimum Certificate III in Commercial Cookery, or extensive practical experience demonstrating competent cullinary skills.
- At least one year of relevant experience working as a Cook in a commercial restaurant kitchen.
- Demonstrated ability to prepare and cook food independently to recipe, quality, portion and presentation standards.
- Sound knowledge of food hygiene, safe food handling, allergen awareness, temperature control and kitchen workplace health and safety requirements.
- Ability to work efficiently under pressure, organise preparation tasks and contribute effectively during high-volume service.
- Availability to work a flexible roster, including evenings, weekends and public holidays.
Preferred:
- Experience of hot pot broth preparation and cooking, Asian dishes, Chinese cuisines, ingredient portioning and consistent flavour control.
- Strong attention to detail, reliability, time management and a cooperative approach to teamwork.
- Multilingual abilities are preferred.
