Anadolu Smallgoods is a leading manufacturer of traditional Turkish and continental smallgoods. Since commencing production in 1978, we have built a reputation for producing high-quality sucuk, pastirma, beef smallgoods and a wide range of traditional continental products using authentic recipes and production methods.
We are currently seeking an experienced Butcher or Smallgoods Maker to join our manufacturing team on a full-time basis.
Duties and Responsibilities
The successful applicant will be responsible for:
- Assisting in the manufacture and production of traditional Middle Eastern and continental smallgoods.
- Selecting and preparing meats for specific smallgoods products.
- Weighing meats, spices and ingredients according to production specifications.
- Mincing, mixing and filling products to required quality standards.
- Preparing and curing meats for cured smallgoods production.
- Operating tumblers, presses and curing equipment.
- Preparing cure mixes and monitoring curing processes.
- Operating and maintaining specialised processing equipment including mincers, mixers, fillers, tumblers, press machines and cooking ovens.
- Operating production machinery including Multivac Thermoformer systems, Bizerba slicers and Handtmann fillers.
- Monitoring product quality throughout the production process.
- Ensuring all products meet batch, quality assurance and labelling requirements.
- Slicing, packaging and labelling finished products for wholesale and retail distribution.
- Following all workplace health and safety requirements.
- Ensuring compliance with HACCP, food safety and quality assurance procedures.
- Assisting with cleaning and sanitisation of production areas and equipment.
- Loading and unloading products for dispatch and receiving deliveries.
Skills and Experience
- Certificate III in Meat Processing (Smallgoods Manufacture) or equivalent qualification.
- At least three years of full-time relevant work experience in smallgoods manufacture.
- Demonstrated experience in the manufacture of traditional cured and cooked smallgoods.
- Experience operating commercial meat processing equipment and packaging machinery.
- Sound knowledge of food safety, HACCP and quality assurance requirements.
- Ability to work efficiently within a fast-paced production environment.
- Strong attention to detail and commitment to product quality.
