Nador Leasing Pty Ltd, trading as Yarrawonga Hotel, a well-established full-service hospitality venue known for quality dining and a welcoming atmosphere, is seeking a skilled and experienced Chef to join our kitchen team on a full-time basis. The successful candidate will plan and direct the preparation and cooking of food, take responsibility for menu development and kitchen output, and lead the kitchen team in delivering high-quality meals while upholding food safety and operational standards.This role suits an experienced individual who can lead confidently in a fast-paced, full-service kitchen and contribute to the ongoing success of the venue.
Key Responsibilities
Menu Planning and Development
- Plan and design menus, including seasonal and à la carte offerings, in consultation with management.
- Estimate food and labour costs, set portion sizes, and control kitchen output to meet budget and profitability targets.
- Develop and refine new dishes and adjust menus in response to customer preferences and seasonal availability.
Food Preparation and Cooking
- Plan, organise, and direct the preparation and cooking of food to established recipes and presentation standards.
- Prepare and cook menu items to a high standard, and demonstrate cooking techniques to kitchen staff.
- Ensure meals are consistently prepared to meet quality and customer expectations.
Kitchen Operations and Cost Control
- Oversee daily kitchen operations, including stock rotation, food storage, and preparation schedules.
- Order supplies, monitor and manage stock levels, and minimise wastage to control costs.
- Ensure the efficient use and proper functioning of kitchen equipment and appliances.
Quality Control
- Monitor and maintain high standards of food quality, portion control, and presentation.
- Discuss food preparation and menu issues with management and staff, and resolve operational problems as they arise.
Team Leadership and Training
- Select, supervise, train, and coordinate the work of cooks and other kitchen staff.
- Direct the kitchen team to ensure smooth and efficient service operations.
Food Safety and Hygiene
- Maintain a clean and organised kitchen workspace.
- Explain and enforce compliance with food safety standards, hygiene practices, and workplace health and safety regulations.
Skills and Qualifications
- Certificate IV or Diploma in Commercial Cookery, or an equivalent qualification.
- At least 2 years of relevant work experience as a Chef in a commercial kitchen environment.
- Demonstrated experience in menu planning, food costing, and kitchen supervision.
- Strong understanding of food safety standards and kitchen hygiene practices.
- Ability to work efficiently and lead in a fast-paced, full-service hospitality environment.
- Strong teamwork, organisational, and communication skills.
Work Schedule
The position requires flexibility to work on a rotating roster, including evenings, weekends, and public holidays, depending on operational requirements.
Remuneration
Annual salary between $75,000 and $85,000 plus superannuation, commensurate with skills and experience.
