Beloved by its locals, The Old Fitzroy Hotel is a pub, bistro and theatre all rolled into one.
With an exciting new chapter underway and a new European-style dining room opening soon, we're looking for a passionate and experienced Chef de Partie to join the kitchen team.
This is an exciting opportunity to be part of something new while working within one of Sydney's most iconic and character-filled pubs.
The Role
We're looking for a confident Chef de Partie who is passionate about great food, strong kitchen culture and quality service.
Working closely with the Head Chef and kitchen team, you'll take ownership of your section and play an important role in bringing the new dining offering to life.
What you'll do
- Take ownership of your section during preparation and service.
- Prepare and deliver high-quality, consistently executed dishes.
- Work as part of a collaborative and fast-paced kitchen team.
- Maintain excellent standards of food quality, presentation and cleanliness.
- Assist with prep, stock management and day-to-day kitchen operations.
- Follow food safety and kitchen procedures at all times.
- Support and mentor junior kitchen team members.
- Contribute ideas, energy and passion as the new dining room comes to life.
We're looking for someone who
- Has previous experience as a Chef de Partie or is a strong Commis Chef ready for the next step.
- Has experience in quality restaurants, bistros or busy hospitality kitchens.
- Has a genuine interest in European-style cooking and produce-led food.
- Is organised, reliable and calm under pressure.
- Takes pride in producing consistently excellent food.
- Works well as part of a team and contributes positively to kitchen culture.
- Is keen to be part of an exciting new chapter for the venue.

Pay: $28.00 – $36.00 per hour
