The Role
We're seeking an experienced and passionate Sous Chef to join the award-winning team at Nobu - Crown Melbourne .
Recognised as one of the world's most iconic Japanese restaurant brands, Nobu is renowned for its innovative Japanese cuisine and exceptional dining experiences, with more than 30 restaurants across the globe.
As Sous Chef, you'll support the Head Chef in the day-to-day operation of the kitchen while providing leadership, coaching and development to your team. You'll play a key role in delivering the exceptional food quality and guest experience Nobu is celebrated for,
In this role, you'll be:
- Supporting the daily operations of a premium, high-performing Japanese kitchen.
- Leading, coaching and mentoring chefs to deliver consistently exceptional standards.
- Assisting with menu execution and maintaining the authenticity and quality of Nobu's signature cuisine.
- Monitoring food quality, presentation and compliance with food safety standards.
- Contributing to cost control through effective management of food and labour expenses.
- Maintaining a positive team culture while driving operational excellence in a fast-paced environment.
About you
You’ll bring the following:
- Extensive experience in Japanese cuisine, with a strong focus on sushi.
- Minimum 5 years' experience as a Sushi Sous Chef or 2 years' experience as a Sushi Head Chef.
- Strong leadership skills with the ability to train, mentor and inspire a team.
- Sound understanding of food cost control, labour management and kitchen operations.
- Commitment to maintaining high standards of food quality and HACCP compliance.
- Certificate III in Commercial Cookery (or equivalent).
- Flexibility to work a rotating roster including weekends and public holidays.
