Opening in September 2026, East Pavilion is a brand-new, multi-million dollar 220-seat waterfront restaurant within the iconic Shoal Bay Country Club precinct, directly opposite Shoal Bay Beach.
Inspired by the port cities and coastlines of Asia, East Pavilion celebrates bold, generous Chinese cooking designed to be shared. Wok-fired dishes, premium produce and genuine hospitality come together in a stunning coastal setting, where two coastlines finally meet at one table.
We're building our opening team and looking for an experienced Sous Chef to help bring East Pavilion to life.
The Opportunity
As Sous Chef, you'll work closely with the Chef de Cuisine and Executive Chef to lead the kitchen team, maintain exceptional food quality and consistency, and ensure seamless execution across every service.
This is a rare opportunity to join a brand-new restaurant before opening, work in a brand-new kitchen and help build the team and culture from day one.
What You'll Be Doing
- Support the Chef de Cuisine in leading, mentoring and developing the kitchen team
- Lead service periods and oversee kitchen operations in the Chef de Cuisine's absence
- Maintain exceptional food quality, consistency and presentation standards
- Support ordering, stock control, food preparation and daily kitchen operations
- Uphold food safety, hygiene and operational standards at all times
What We're Looking For
- Previous experience as a Sous Chef in a high-volume, quality-driven kitchen
- Strong wok cooking experience
- Experience with Chinese or South East Asian cuisine
- Proven ability to lead, develop and motivate kitchen teams
- Strong communication skills with a calm and organised approach

Pay: $88,000.00 – $95,000.00 per year
