Running With Thieves is located on the iconic South Beach and is prominent in the Fremantle hospitality and entertainment industry. This vibrant venue is home to a fully operational brewery and distillery that houses a 400-person bar and restaurant with entertainment, and a retail outlet. The restaurant and bar are casual with a menu that offers bold and well-balanced food you can hold in one hand while holding a drink in the other. We are seeking a Junior Sous Chef who thrives during service, understands timing, presentation and communication, and can confidently lead the kitchen in the absence of the Executive Chef and Head Chef.
Key Responsibilities
- Take charge of the kitchen in the absence of executive chef and head chef, ensuring dishes meet presentation, quality, and temperature standards.
- Prepare dishes and section management.
- Coordinate between kitchen sections to maintain smooth service flow.
- Communicate clearly with FOH to manage service timing and special requests.
- Support the team as allrounder.
- Train and mentor junior kitchen staff.
- Assistance with ordering and stock control.
- Ensure compliance with food safety and workplace standards.
Requirements
- Previous experience as senior CDP proficient on grill and pans section.
- Qualification in commercial cookery.
- Strong service coordination skills.
- Ability to work under pressure.
- Good leadership and communication skills.
- Knowledge of food safety standards and HACCP.
- Flexibility availability including weekends and evenings.

This is a full time position, 38 hours per week with a salary of $80,000 PA.
