The Venue
The Gidley, found in Sydney’s CBD on the corner of King and Elizabeth, is an opulent steak house, where fine dining meets semi-respectable displays of gluttony.
As our guests step inside and make their way down dimly lit stairs to the Lounge Bar, an intimate haven of plush furnishings and quiet corners. As their table’s being prepared, guests can enjoy old-school charm with your favourite stiff drink before taking a seat in the lavish Dining Room. Here, is where guests sink their fork into prime cuts and sip on juicy reds while allowing the jovial spirit of golden-age hospitality to unfold around them.
The Role
This is a hands-on leadership position at the heart of the bar. You will be responsible for the consistency of every pour, the confidence of your team, and the experience of every guest. You will operate with autonomy, set the standard by example, and ensure the bar reflects the tone of the venue every shift, without exception.
Day to Day
Ensuring all cocktails are prepared to specification, every time
Leading and directing the bar team with clarity and confidence
Maintaining a fully stocked bar — wet goods, dry goods, and batched product
Ensuring efficient, professional guest experiences aligned with brand strategy
Ordering and managing stock with a keen eye on waste and budget
Cash up reconciliation and operational administration
Communicating seamlessly across the full venue team
Upholding compliance with all relevant legal requirements
Hosting and supporting floor service as required
About You
Proven experience in a premium or hatted venue — this is essential
Self-assured, calm under pressure, and decisive
A genuine passion for hospitality and the craft of the bar
Relentless attention to detail, you notice what others miss
A natural communicator and confident team leader
Curious, creative, and always looking to push the offering forward
