About the Role
We are looking for a passionate, qualified, experienced, professional Chef at Hotel for our daily operations. The position is full time. You may be required to work different/extra hours depending on functions or bookings as the restaurant opens 7 days a week.
The job duties are described as under:
● Managing the overall operations of kitchen
● Determine how food should be presented and create decorative food displays
● Inspecting raw ingredients to check for spoilage and assess usability.
● Maintaining skills and knowledge relevant to job duties and preparing items on restaurant menu.
● Plan, collect, estimating food and commodities for menus.
● Prioritise menus, recipes, and task sheets. Managing budgeting and cost controls by estimating labour and food costs.
● Provide great leadership, guidance and training to kitchen staff including cooks, wait staff, kitchen hands, etc. Utilising kitchen utensils, appliances, and cookware to prepare ingredients and meals.
● Preparation of raw ingredients including meat and vegetables through use of varied cutting and marinating techniques.
● Meet with customers to discuss menus for special occasions such as weddings, parties, and banquets
● Monitoring and regulating heat and cold sources such as ovens, stoves, fridges, freezers, grills, and other equipment to ensure food quality.
● Maintain product, service, and market knowledge. Take pride in food presentation while always ensuring top quality of food.
● Taking feedback from regular and new patrons about food taste, expectations, and further improvements, etc.
● Working with management about improvement of efficiency, quality, and productivity of food. Guiding kitchen staff with cooking procedures and on recipes to fit special dietary requirements (e.g., vegetarian, vegan, cultural requirement, etc.)
● Managing storage, food preservation to reduce wastage. Serving and portioning foods and adding garnishes and other ingredients as necessary to ensure dishes are well presented.
● Preparing and flavoring sauces with condiments, herbs, spices, and other ingredients as required by the recipe. Following safety and hygiene regulations and procedures around food handling, storage, preparation.
● Ensuring the cleanliness of workstations and kitchen areas and abiding by occupational health and safety procedures.
● Contributing to menu changes, taking into account the availability of seasonal produce at the facility.
● Collaborating with other staff members, including waitstaff, management, and fellow kitchen staff, to address kitchen-related issues.
● Engaging with regular residents and new arrivals to understand their tastes, preferences, expectations, feedback on food quality, and suggestions for enhancements.
● Working with management for the improvement of efficiency, quality, and productivity of food
About you
The successful candidate will possess:
∙ Minimum 3 year experience as a chef (candidates with higher experience will be preferred).
∙ Relevant Qualification in Commercial Cookery.
∙ Supervisory skills
∙ Confident approach and results driven
∙ Flexibility with hours and approach
∙ Good communication and technology skills
∙ Excellent attention to detail.
∙ Ability to work under pressure to deliver timely and quality results.
Salary range between $70,000 to $80,000 plus superannuation will be paid based on experience and skills to deserving candidates.
