Purpose:
Flaminia is seeking skilled and passionate Trade Waiters to join the team. Located on the iconic harbour, Circular Quay, Flaminia delivers a curated tour of Italian port cities using exception Australian produce while watching ferries dock and depart.
This is a full-time opportunity for hospitality professionals who thrive in a high-end, service-driven environment. A minimum of 3 years experience is required, fine dining experience preferred.

Contract Type: Permanent Full Time
Salary: $80,000 to $85,000 plus superannuation
Primary Responsibilities:
- Greet and seat guests, present menus, and offer knowledgeable recommendations on food and wine pairings
- Take accurate food and beverage orders and relay them to the kitchen and bar
- Serve dishes and drinks with care, maintaining fine-dining standards at all times
- Open and pour wines, mix basic drinks, and assist in the cellar where needed
- Clear and reset tables efficiently, maintaining a clean and organised dining area. Handle payments using POS systems and ensure a smooth end-to-end guest experience.
- Assist management with leadership and driving team performance.
- Assisting with the onboarding and training of new employees.
- Leading by example.
Skills and Experience:
- Certificate III in Hospitality or other equivalent qualification
- Minimum 3 years experience in a similar waitstaff role, in a fine-dining environment
- Strong knowledge of food, wine, and Italian cuisine
- Polished communication and interpersonal skills
- High attention to detail, strong work ethic, and team-oriented mindset
- RSA certificate and full Australian working rights
- Availability to work evenings, weekends, and public holiday
