Rengaya 2020 Pty Ltd T/A Rengaya Casual Dining is a well-established, full-service Japanese BBQ (Yakiniku) restaurant located in the heart of Burwood, Sydney. The restaurant offers an authentic Japanese BBQ buffet dining experience, including premium BBQ meat, seafood, sushi, sashimi, salads, rice dishes, soup and desserts.
We are currently seeking a skilled and reliable Chef to join our kitchen team on a full-time basis. This position is suitable for a candidate with solid commercial kitchen experience, strong food preparation skills, and an interest in Japanese cuisine, particularly Japanese BBQ / Yakiniku-style dining.
POSITION SUMMARY
The Chef will be responsible for overseeing day-to-day kitchen operations and ensuring the consistent preparation and presentation of dishes that meet Rengaya's quality standards and reflect the authenticity of Japanese BBQ cuisine.
KEY RESPONSIBILITIES
- Oversee daily kitchen operations and ensure dishes are prepared and served in a timely manner
- Prepare and present a wide range of Japanese BBQ dishes and accompanying menu items
- Contribute to menu planning and the development of new dishes
- Manage daily ordering and purchasing of fresh produce, meat and other ingredients
- Inspect prepared food to ensure portion size, quality and freshness are maintained
- Monitor stock levels and minimise wastage
- Supervise, train and roster kitchen staff
- Maintain kitchen hygiene and comply with all food safety requirements
- Assist with the recruitment of kitchen staff
- Conduct regular kitchen team meetings and report to management on kitchen performance.
SKILLS AND EXPERIENCE REQUIRED
- Diploma or higher qualification in Hospitality, Commercial Cookery or a related discipline
- A minimum of 1 year' professional cooking experience in a commercial restaurant kitchen
- Demonstrated experience working in a Japanese restaurant environment, with practical knowledge of Japanese cooking techniques and ingredients
- Familiarity with Japanese BBQ (Yakiniku) preparation methods, including meat selection, cutting and grilling, is highly regarded
- Strong understanding of kitchen hygiene, food safety and quality control
- Proven ability to work effectively in a fast-paced, high-volume kitchen
- Ability to supervise and coordinate kitchen staff
- Availability to work flexible hours, including evenings and weekends
