Palazzo Salato is an ode to the great trattorias of Rome – a 120-seat Roman-inspired restaurant in the heart of Sydney’s CBD, housed within a heritage-listed building on Clarence Street. As the Love Tilly Group’s most ambitious venture yet, we’re a little more grown up, a little more refined, and with a lot more space.
We serve a menu of hand-rolled pasta, snacks and sustainably sourced proteins from some of Australia’s best farmers, devised by Executive Chef Alex Major. Our 800-strong wine list focuses on Italian, Australian and French wines. From our walk-in bar and bustling dining room to our hidden private dining room seating up to 22 guests, we offer a lively space for every occasion.

We’re looking for a Restaurant Manager to lead our front-of-house team and help drive the next chapter of Palazzo Salato.
This is a rare opportunity to take the reins at one of Sydney’s most exciting dining destinations. You’ll work alongside an exceptionally talented team, overseeing daily operations in a high-volume, fast-paced environment where hospitality is everything.
Key Responsibilities:
Lead, motivate and develop the front-of-house team, fostering a culture of warm, attentive hospitality
Oversee day-to-day restaurant operations, ensuring seamless service across the dining room, bar and private dining areas
Manage reservations, floor planning and service pacing for our 120-seat venue
Work closely with the kitchen team to ensure food quality, presentation and consistency
Drive financial performance including cost control, inventory management and revenue growth
Handle guest feedback and resolve issues with professionalism and discretion
Maintain the highest standards of restaurant presentation, hygiene and operational readiness
Support and contribute to the Love Tilly Group’s culture of craft, accessibility and fun
You’re a hospitality professional with personality and passion. You thrive in a busy, high-energy environment and know how to keep a team motivated and a dining room humming.
You’ll bring:
Proven experience as a Restaurant Manager or Senior Assistant Manager in a premium casual or fine dining setting
Strong leadership and team development skills
Exceptional guest service standards and a natural ability to connect with people
Solid financial acumen – you understand P&L, labour costs, and inventory management
Excellent communication and organisational skills
A deep appreciation for Italian food, wine and hospitality
Current RSA certification
Full working rights in Australia
Experience with high-volume venues (100+ seats) and knowledge of Italian wine would be highly regarded.
