We are seeking experienced and talented Chefs to join our team and play an important role in establishing and maintaining high standards of food preparation, kitchen operations, food safety, and service at our new Melbourne location.

Position Overview
The Chef will be responsible for planning, preparing, cooking, and presenting a range of authentic Indian and Hyderabadi dishes, including specialty biryanis. The role requires strong culinary skills, knowledge of kitchen operations, and the ability to maintain consistent standards of food quality, hygiene, and presentation.
Main Duties and Responsibilities
- Plan, prepare, and cook authentic Indian and Hyderabadi cuisine.
- Prepare a range of traditional and specialty biryanis.
- Plan and organise food preparation and cooking activities according to service requirements.
- Monitor the quality, taste, freshness, and presentation of dishes at all stages of preparation and service.
- Follow established recipes and maintain consistency in food preparation.
- Develop and test new recipes and menu items where required.
- Plan and prioritise menus, recipes, and kitchen tasks.
- Estimate food and commodity requirements and assist with ordering supplies.
- Receive, inspect, store, and rotate stock in accordance with enterprise standards.
- Maintain effective stock and inventory control.
- Minimise food wastage and spoilage.
- Prepare food to meet special dietary requirements where required.
- Operate specialised kitchen equipment safely and efficiently.
- Ensure equipment is correctly cleaned, maintained, and stored.
- Maintain high standards of personal hygiene, sanitation, and cleanliness throughout the kitchen.
- Follow food safety, workplace health and safety, and sanitation requirements.
- Plan and sequence food preparation and cooking tasks within required timeframes.
- Communicate effectively with kitchen and food service staff.
- Work cooperatively with other members of the kitchen team.
- Give clear instructions to kitchen staff within the area of responsibility.
- Assist with training and supervising kitchen staff where required.
- Prepare, display, service, and clear buffet food where required.
- Deal effectively with food shortages, preparation mistakes, and food-quality issues.
- Report problems, incidents, and operational issues to management.
- Evaluate food products to ensure quality standards are consistently maintained.
- Contribute to smooth and efficient kitchen operations during busy service periods.
Skills and Experience
Applicants must have:
- At least a Diploma-level qualification in Commercial Cookery or a relevant field.
- At least 2 years of relevant experience in a similar Chef role.
- Experience in Indian and/or Hyderabadi cuisine is highly desirable.
- Strong knowledge of food preparation and a wide range of cooking methods.
- Experience preparing biryani and other Indian specialty dishes.
- Knowledge of stock control, ordering, food storage, and kitchen operations.
- Strong understanding of food safety, hygiene, and sanitation.
- Excellent organisational and time-management skills.
- Ability to work efficiently under pressure in a busy commercial kitchen.
- Good communication and teamwork skills.
- Commitment to maintaining high standards of food quality and presentation.
