About the Role
This is a rare chance to shape a hotel's food & beverage identity from the ground up. As F&B Operations Manager Flagstaff Gardens, you'll be at the centre of one of EVT's most exciting Melbourne refurbishments, a full transformation of our restaurant into a modern Australian bistro.
You won't just be running a venue, you'll be building one. You'll help bring the new bistro concept to life, grow our C&E offering and create an exciting bar experience that keeps bring guests back. In this role you’ll drive a calendar of activations, local supplier nights and promotions that put this hotel on Melbourne's food and drink map. It's a hands-on role, you'll be on the floor, leading the team, solving problems in real time and setting the standard for service as the doors reopen on a completely reimagined space.

Key Responsibilities
- Drive revenue growth across the restaurant and bar by focusing on spend per cover, service excellence and profitability.
- Manage inventory, stock control, and expenditure across the F&B outlets.
- Lead roster planning and labour cost management aligned with budget forecasts.
- Build a high-performance team culture focused on engagement, development, and retention.
- Ensuring continued adherence with all WHS procedures, hygienic food handling and RSA practices.
- Collaborate with the GM on cocktails lists, specials, activations and promotions.
- Respond to guest feedback and implement service improvements to enhance experience.
- Forecast demand, plan marketing initiatives, and evaluate event feasibility to maximise revenue.
- Generating feasibility models for adhoc events or promotions analysing the potential profit and loss. E.g. Mothers’ Day, Melbourne Cup, Christmas Day luncheons.
What You’ll Bring
- 1-2 years of previous experience in a senior F&B role ideally having worked in hotels or restaurants, including running events.
- A strong beverage background with a solid knowledge on cocktail mixology and wines.
- The ability to write cocktail lists, a creative flair to design specials and signature drinks.
- Strategic in creating new ideas to drive revenue and guest spend.
- Strong people leadership skills, with the ability to coach, motivate and get the best from a floor team
- Confidence working through change, comfortable balancing day to day service with an evolving refurbishment environment
- Excellent communication skills and a natural relationship builder, with guests, suppliers and your team alike.
- Ability to lead from the front, drive an excellent team culture and develop staff.
- Strong financial acumen (e.g. P&L analysis, forecasting).
- A passion for hospitality, people focused and innovative thinking.
