Ascot Vale Hotel - Chef de Partie
Ascot Vale Hotel is one of Melbourne’s best-known neighbourhood venues, recognised for its relaxed atmosphere, quality food, and busy lunch and dinner service. We are seeking a talented and motivated Chef de Partie to join our kitchen team on a full-time basis.
Reporting to the Head Chef, you will run your designated section with precision and pride. This is a hands-on role across lunch and dinner service, with a rotating roster across Monday to Sunday.
Key Responsibilities
· Prepare, cook, and plate dishes to a high standard across your section
· Assist with menu development, seasonal specials, and new dish creation
· Maintain food safety, hygiene, and OH&S standards at all times
· Manage mise en place and section organisation for efficient service
· Train and support junior kitchen staff
· Monitor stock, minimise waste, and communicate ordering needs
· Support the kitchen during functions and private events as required
Skills and Experience
· Minimum 1 year of full-time work experience (or part-time equivalent) as a chef
· Formal culinary qualification such as Certificate III or IV in Commercial Cookery (preferred)
· Ability to run a section independently during busy service periods
· Strong knowledge of food safety and hygiene practices
· Experience with fresh, seasonal produce and modern Australian cuisine
· Ability to work efficiently under pressure in a fast-paced environment
· Excellent communication skills and a team-focused attitude
· Full availability across a rotating roster including evenings and weekends

· Salary of $75,000 - $85,000 per annum plus superannuation, depending on experience
