The Aussie Hotel in Shepparton is searching for an experienced and passionate Head Chef to take ownership of our newly renovated kitchen and lead a strong, established team. As Head Chef, you'll be responsible for leading all kitchen operations, driving food quality, managing costs and developing a positive team culture. You'll work closely with venue leadership to deliver a consistent and profitable food offering while maintaining high operational standards.
Key Responsibilities
Lead, train, mentor and develop the kitchen team
Manage rostering, labour costs and kitchen performance
Maintain exceptional food quality, presentation and consistency
Create seasonal specials and contribute to menu development
Oversee stock control, ordering and supplier relationships
Ensure food safety, compliance and cleanliness standards are maintained
Manage food costs, recipe costing and kitchen profitability
Lead from the front during service and support the team in all areas of operation
We're looking for a genuine leader who is passionate about hospitality and building high-performing teams.
Minimum 6 years' experience in professional kitchens
Ideally 3+ years' experience as a Head Chef in a pub, hotel or high-volume venue
Strong Sous Chefs ready to step into their first Head Chef role are encouraged to apply
Proven experience managing food and labour costs
Excellent leadership, communication and organisational skills
Strong knowledge of modern pub and bistro dining
A hands-on approach and willingness to lead by example
A valid driver's licence
A team-first attitude and commitment to creating a positive kitchen culture
