The Opportunity We are currently seeking an experienced and trade-qualified Chef to join our high-profile aviation catering client based at Sydney Airport.
This is not a typical restaurant role. You will be working in a large-scale, high-volume commercial production kitchen preparing airline meals to exact specifications. The environment is structured, compliance-driven, and deadline-focused, requiring strong attention to detail, teamwork, and efficiency.

Key Responsibilities Food Preparation & Production

Prepare, cook, and assemble a wide variety of hot and cold food items in accordance with airline specifications

Follow standardised recipes, production schedules, and presentation guidelines with precision

Monitor food quality at all stages of preparation to ensure consistency and compliance

Portion and label products accurately according to control specifications

Ensure timely completion of production targets to meet flight schedules
Quality & Compliance

Adhere strictly to HACCP, food safety, and quality assurance protocols

Complete required documentation, temperature logs, and compliance records accurately

Follow all workplace health and safety procedures

Identify and report any quality or safety concerns promptly
Teamwork & Efficiency

Work collaboratively within a large production team

Support supervisors and team leaders in meeting operational deadlines

Maintain workflow efficiency in a high-pressure, deadline-driven environment

Contribute to continuous improvement initiatives within the kitchen
Hygiene & Housekeeping

Maintain clean, sanitised, and organised workstations

Ensure all equipment and utensils are cleaned and stored correctly

Uphold high standards of personal presentation and hygiene at all times
Selection Criteria Essential

Certificate III or IV in Commercial Cookery

Minimum 7 years’ experience as a fully qualified Chef

Demonstrated experience in high-volume food production

Excellent knife skills and strong technical cookery fundamentals

Sound knowledge of HACCP and food safety standards

Ability to follow detailed specifications and recipes precisely

Strong time management skills and ability to work under pressure

Availability to work across a 7-day rotating roster, including weekends and public holidays
