About Us
Pavoni Plus Pty Ltd, the team behind the renowned a’Mare at Crown Sydney, proudly presents Cibaria Manly, our newest venue in the heart of the Northern Beaches.
Cibaria is a multi-level, 350-seat Italian restaurant that brings together the best of Italian cuisine across its diverse culinary stations that include; antipasteria, salumeria, spaghetteria, bisteccheria, forneria, cruderia, friggitoria, and gelateria. From handcrafted pastas and woodfired pizzettas, to curated cocktails and house-made gelato, we offer a true Italian experience from morning through to late evening.
Our venue includes à la carte dining, private event spaces, and our beachfront Caffetteria open daily from 7am. We also serve bespoke drinks through Cocktaileria, located within 55North Bar by Cibaria, in partnership with the Manly Pacific Hotel (M Gallery).
Since opening, Cibaria has become a local favourite with most evenings and weekends fully booked.
We're Looking For
We are now hiring experienced Chef de Parties, to join our team and lead our multiple kitchens and culinary sections including:
Forneria, Braceria, Salumeria, Bisteccheria, Spaghetteria, Caffetteria, and Pasticceria.
What We’re After
Essential Requirements:
· Full Australian working rights
· Diploma Qualifications and/or 1-3 years employment experience
· Experience with Italian cuisine essential
· Understanding of kitchen cost control and efficiency
· Calm under pressure, strong attention to detail
· High personal grooming and hygiene standards
· Menu creation experience (preferred for leadership roles)
Desirable Extras:
· Food Safety Supervisor Certificate
· Food Handling Certificate
· First Aid Certification
· Fresh pasta making skills
· Butchery or pastry experience
· Confident handling fresh seafood
· Italian language skills – bonus!
Key Responsibilities
· Leading and supporting your kitchen team
· Overseeing food preparation and service
· Maintaining a clean, safe, well-stocked kitchen
· Consistent execution of high-quality, beautifully presented dishes
· Rostering and labour cost management
· Ensuring compliance with food safety regulations
· Ongoing training and development of staff
· Monitoring costs in line with budgets
