Kuon Sushi Sei is located in the Darling Square precinct of Sydney’s CBD. We offer a casual-style sushi omakase experience, where guests place their trust entirely in the chef’s hands. Our menu features premium seafood dishes, our signature chawanmushi, and a variety of meticulously prepared items that showcase flavour, character, and Japanese craftsmanship. Each dish is served directly in front of the guest, highlighting precision, seasonal ingredients, and the freshest local fish and seafood. Bookings are typically made several months in advance due to high demand.

We are currently seeking a standout on-call Chef — someone who is a true foodie at heart — to join our dedicated kitchen team.
Position: Chef
The successful candidate will be responsible for maintaining the highest standards in food preparation, production, and presentation, while adhering to budget requirements. This is a hands-on role that requires excellent attention to detail, strong work ethic, and a positive attitude to support the sustainable and profitable operation of the restaurant. Daily coordination and supervision of kitchen activities are also key responsibilities.

We are seeking a passionate, enthusiastic, and skilled Chef with experience in high-end or hatted restaurants. This is a rare opportunity to join a small, supportive team that consistently delivers refined Japanese cuisine with a strong focus on sushi and sashimi.

Ideal Candidate Requirements
- Minimum 6+ years’ experience in hatted or fine dining restaurants
- Ability to assist with food preparation and support the wider culinary team
- Intermediate to advanced knowledge of food preparation, hygiene, and safety standards
- Strong organisational skills with efficient, clean work habits
- Experience working with seafood, filleting fish, and preparing/cooking tempura
