About the Role
Reporting directly to the Restaurant Manager, you will play a key supervisory role within our commercial kitchen. The successful candidate will be responsible for planning and preparing high-quality dishes, coordinating daily kitchen operations, maintaining food safety standards, and supporting the development of junior kitchen staff while ensuring a consistently high standard of food quality and service.
Key Responsibilities
- Plan menus in consultation with management, considering seasonal produce, customer preferences and business objectives.
- Estimate food and labour costs and assist with purchasing, ordering and stock control.
- Prepare, season and cook a wide variety of Vietnamese and Asian-inspired dishes to a consistently high standard.
- Monitor food quality throughout preparation, cooking and presentation to ensure consistency.
- Coordinate daily kitchen operations to maintain efficient workflow during lunch and dinner service.
- Receive, inspect and appropriately store food deliveries to maintain product quality and food safety.
- Maintain high standards of food hygiene, workplace health and safety, and sanitation in accordance with relevant legislation and food safety regulations.
- Demonstrate cooking techniques and provide guidance, supervision and training to kitchen staff and apprentices.
- Monitor food quality, portion control and minimise food wastage.
- Assist with rostering, supervising and mentoring kitchen staff.
- Work collaboratively with management to improve menu offerings, kitchen efficiency and overall customer satisfaction.
Qualifications and Experience
- Certificate IV in Commercial Cookery or higher (or equivalent qualification).
- At least three years' experience working as a Chef in a commercial kitchen.
- Previous experience preparing authentic Vietnamese and Asian cuisine will be highly regarded.
- Sound knowledge of food safety, hygiene and workplace health and safety requirements.
- Excellent organisational, communication and leadership skills.
- Ability to work efficiently in a fast-paced commercial kitchen.
- Availability to work a flexible roster including lunch and dinner service, weekends and public holidays.
