About the Role
We are looking for a passionate, qualified, experienced, and professional Chef to join the team at Mocha Mojo Cafe, located at Shop 25/1 O'Shea Rd, Berwick VIC 3806.
This is a full-time position responsible for supporting and managing the daily kitchen operations of the café. As the business operates 7 days a week, the successful applicant may be required to work different or additional hours depending on operational requirements, functions, bookings, and business needs.
Key Duties and Responsibilities
The successful candidate will be responsible for, but not limited to:
- Managing the overall operations of the kitchen and ensuring smooth day-to-day kitchen service. Planning and preparing menus in consultation with management, taking into consideration seasonal produce, customer preferences, availability, and business requirements. Determining appropriate food presentation and creating attractive and decorative food displays. Inspecting raw ingredients to check for freshness, quality, spoilage, and usability. Preparing and cooking food items in accordance with the café's menu, recipes, and quality standards. Preparing raw ingredients, including meat, poultry, seafood, vegetables, and other food products, using appropriate cutting, preparation, and marinating techniques. Preparing and flavouring sauces, dressings, condiments, herbs, spices, and other ingredients in accordance with recipes. Utilising kitchen utensils, appliances, cookware, ovens, grills, stoves, refrigerators, freezers, and other kitchen equipment safely and effectively. Monitoring and regulating cooking temperatures and refrigeration conditions to ensure food quality and safety. Estimating and planning food, ingredients, commodities, and supplies required for menus and daily operations. Managing food costs, portion control, stock usage, labour requirements, and wastage to support effective budget and cost control. Managing food storage and preservation appropriately to maintain freshness and minimise wastage. Ensuring dishes are properly portioned, garnished, and presented to the required standard before service. Providing leadership, guidance, supervision, and training to kitchen staff, including cooks, kitchen hands, and other relevant staff. Prioritising kitchen tasks, recipes, preparation schedules, and daily task sheets to ensure timely service. Maintaining high standards of food quality, presentation, consistency, and customer service. Taking feedback from regular customers and new patrons regarding food taste, quality, preferences, expectations, and potential improvements. Working closely with management to improve the efficiency, quality, productivity, and overall performance of kitchen operations. Guiding kitchen staff regarding cooking procedures, recipes, preparation methods, and dietary requirements, including vegetarian, vegan, cultural, and other special dietary needs. Meeting with customers where required to discuss menus and catering requirements for special occasions, functions, parties, and other bookings. Contributing to menu changes and improvements based on customer feedback, seasonal availability, and business requirements. Collaborating with management, front-of-house staff, kitchen staff, and other team members to identify and resolve kitchen-related issues. Engaging with regular customers and new patrons to understand their tastes, preferences, expectations, and feedback regarding food quality and service. Maintaining product, service, food preparation, and market knowledge relevant to the role. Ensuring compliance with food safety, hygiene, workplace health and safety, and other applicable procedures and requirements. Maintaining cleanliness and organisation of workstations, kitchen areas, equipment, storage areas, and food preparation areas. Following appropriate food handling, storage, preparation, cleaning, and sanitation procedures at all times. Ensuring all kitchen operations are conducted efficiently while maintaining high standards of food safety and quality. Performing other duties reasonably required in connection with the position and the daily operation of the café.
About You
The successful candidate will possess:
- Minimum 1 years' experience as a Chef or in a similar commercial kitchen environment. (higher experience will be preferred) Relevant qualification in Commercial Cookery. Strong supervisory and kitchen leadership skills. Demonstrated ability to manage kitchen operations effectively. Confident, professional, and results-driven approach. Ability to work independently as well as collaboratively within a team. Flexibility to work across different shifts, including weekends and additional hours when required. Good communication and technology skills. Excellent attention to detail. Strong organisational and time-management skills. Ability to work effectively under pressure and deliver timely, consistent, and high-quality results. Strong understanding of food safety, hygiene, storage, and preparation procedures. Passion for food, presentation, quality, and customer satisfaction.
