Adamo's Pasta is a premium fresh pasta production and retail business based in Rosebery, Sydney. We produce handcrafted pasta of the highest quality, supplying our dedicated shopfront as well as a growing network of wholesale customers. The Opportunity
We are looking for an experienced and driven Head Chef to lead our production kitchen. This is a Monday-to-Friday role — no evenings, no weekends — with consistent hours from 11:00 AM to 7:00/7:30 PM. You will be the creative and operational engine of our kitchen, working closely with our General Manager and Owner to drive production quality, introduce new product lines, and support our revenue growth targets.
This role is central to our business strategy. Your work in the kitchen directly supports our ambitious revenue growth targets for 2026 and beyond.
Key Responsibilities
- Lead and manage all day-to-day fresh pasta production to the highest quality standards
- Develop and launch new single-portion and ready-made vacuum-packed meal ranges for retail and wholesale
- Prepare and produce a seasonal Christmas pasta range to commercial production standards
- Maintain consistency, food safety, and quality control across all products
- Manage kitchen staffing, rostering, and day-to-day team performance
- Collaborate with the General Manager on production scheduling and volume planning
- Contribute to menu and product development to support ongoing retail and wholesale growth
- Monitor ingredient costs, minimise waste, and support kitchen profitability
- Ensure full compliance with food safety regulations and hygiene standards
What We're Looking For
- Proven experience as a Head Chef or Senior Chef in a production, restaurant, or artisan food environment
- Strong background in pasta, Italian cuisine, or fresh food manufacturing highly regarded
- Demonstrated ability to lead a kitchen team and drive consistent, high-volume output
- Experience with vacuum-packed or ready-made meal production is an advantage
- A collaborative, hands-on approach — you lead from the front
- Strong understanding of food safety, HACCP, and kitchen hygiene standards
- Passion for quality, craft, and building something special
