Sushi Chef (Cook)
Kobe Wagyu is seeking a full-time Sushi Chef to join our busy Japanese restaurant. The successful applicant will prepare and cook authentic Japanese cusine while maintaining high standards of food quality, presentation, consistency and food safety.
Annual Salary: AUD 80,000 + Superannuation
Key Responsibilities
- Inspect meat, seafood, vegetables and other ingredients to ensure freshness, quality and compliance with food safety standards.
- Operate commercial kitchen equipment, including stoves, ovens, grills, deep fryers and other cooking appliances at appropriate temperatures.
- Prepare, season and cook a variety of Japanese dishes, including sushi, Wagyu dishes, rice dishes, soups, noodles, side dishes and other menu items in accordance with established recipes and restaurant standards.
- Portion and present meals with appropriate sauces, garnishes and accompaniments before service.
- Store raw and cooked food in temperature-controlled storage areas and rotate stock using FIFO (First In, First Out) principles.
- Prepare meals to accommodate customers' dietary requirements and food allergy requests.
- Assist with estimating daily food requirements and minimising food wastage.
- Clean and maintain food preparation areas in accordance with food safety, sanitation and workplace health and safety requirements.
- Assist in training kitchen staff on food preparation techniques and food safety procedures as required.
Requirements
- Certificate III in Commercial Cookery, Certificate IV in Kitchen Management and Diploma of Hospitality Management or equivalent qualification.
- At least one year of relevant experience preparing Japanese cuisine, including sushi.
- Knowledge of food safety and hygiene practices.
- Ability to work efficiently in a fast-paced kitchen environment.
- Strong attention to detail and commitment to quality.
Availability to work evenings, weekends and public holidays as required.
Pay: $80,000.00 per year
