Job Purpose:
To prepare and present authentic Indian cuisine while maintaining high standards of food quality, consistency, hygiene, and customer satisfaction. The role involves managing food preparation, supervising kitchen operations, monitoring stock and food costs, developing menu items, and ensuring compliance with Australian food safety and workplace health and safety requirements. The Chef contributes to the efficient operation of the restaurant by leading kitchen staff, maintaining quality standards, and delivering an exceptional dining experience.
Duties and Responsibilities:
- Prepare and cook a diverse range of traditional and contemporary Indian dishes using authentic recipes, spices and cooking techniques.
- Develop innovative recipes, design and update menus that reflect customer preferences, seasonal ingredients and market trends.
- Oversee the daily activities of cooks and kitchen assistants, ensuring efficient workflow and adherence to operational procedures.
- Maintain portion control and monitor all stages of food preparation to ensure dishes meet established standards for taste, quality and consistency.
- Liaise with suppliers to place orders, track stock levels of food, spices and kitchen consumables to ensure uninterrupted kitchen operations.
- Implement effective stock rotation, storage and portioning practices to reduce waste and maximise ingredient utilisation to support the restaurant's financial objectives.
- Maintain compliance with all relevant food safety, sanitation, workplace procedures, regulation and health and safety requirements.
- Conduct regular inspections of kitchen facilities, equipment and storage areas to ensure cleanliness and proper maintenance.
- Provide guidance and practical training to kitchen staff on cooking methods, food safety practices, and operational procedures.
- Manage kitchen workflow and allocate resources effectively to ensure meals are prepared and served promptly to deliver a positive customer experience.
Skills and Specifications:
- Certificate IV in Commercial Cookery or equivalent qualification with a minimum 2 years of relevant work experience.
- Strong knowledge of Indian cuisine, spices, cooking methods and regional dishes in accordance with established recipes and standards.
- Excellent organisational and multitasking abilities, combined with proven capacity to work calmly and efficiently in a high-volume, fast-paced hospitality setting.
- Proven leadership and people management capabilities, with strong communication skills and a commitment to achieving excellence in food quality, presentation and consistency.
- Demonstrated knowledge of Australian food safety, sanitation, workplace health and safety regulations and industry best practices within a hospitality environment.
