The Venues

From the house specialty, whole dry-aged roasted and pressed duck, to an exclusive wine selection and our dessert trolley layered with house-baked cakes, desserts and petit-fours, The Charles is a classic experience with an exuberant attitude.
Next door, The Charles Bar brings a neighbourhood feeling to the centre of the CBD. A chic all-day dining café and bar à vin sitting next to our Grand Brasserie, pop in for a relaxed lunch, an after-work aperitif or dine with us for dinner.
Loulou is Sydney's French dining destination — an all-day bistro in the heart of the CBD, offering classic French dishes, refined service, and a vibrant atmosphere. Loulou has made its mark as the place to enjoy everything from a leisurely déjeuner to an elegant dinner paired with exceptional wines.
The Opportunity
The Sommelier is supported by our Area Head Sommelier and works closely with the management team, while taking carriage of the wine program and service in venue. Overall responsibility includes delivering excellent guest experience, with a strong focus on understanding how to grow the business through financials and inspiring the team around them.
The Role
- Work with the service team to meet to deliver a comprehensive beverage program within your venue.
- Stay ahead of industry trends and reflect and implement these changes with the venue, enhance the guest experience, service standards and product presentation across wine and beverage.
- Work with Head Sommelier on the development and implementation of policies and procedures for wine/beverage procurement and operations.
- Build and manage strong relationships with key stakeholders, key suppliers; curate and develop a community of locals and regulars within, and around the business, with optimal growth in front of mind.
- Inspire the team to deliver exceptional dining experiences and maximise revenue.
- Stay ahead of industry trends, changes in innovation, the newest releases, and then reflect and implement these changes within the venue.

- Strong Communication Skills: engaging with guests, colleagues, and suppliers. The ability to articulate wine and sake knowledge.
