The role
The Chef will be responsible for preparing, cooking, and presenting high-quality dishes while supporting the efficient day-to-day operation of the kitchen. Working closely with the Head Chef and other kitchen staff, the successful candidate will assist in maintaining food quality, consistency, food safety, and smooth kitchen operations during busy service periods.
Key responsibilities
- Prepare, season, cook, and present a diverse range of menu items, including smoked meats, Texas-style barbecue dishes, burgers, share plates, sides, desserts, and other bistro offerings, in accordance with established recipes and quality standards
- Prepare and cook beef, pork, chicken, and other ingredients using a variety of commercial cooking techniques, including smoking, grilling, roasting, frying, baking, and braising
- Operate smokers, grills, ovens, fryers, and other commercial kitchen equipment safely and efficiently to produce consistently high-quality dishes
- Monitor cooking times, temperatures, food quality, and presentation throughout all stages of preparation to ensure consistency with restaurant standards
- Assist with menu planning and the development of seasonal menus, daily specials, and new dishes that complement the restaurant's Texas-style American barbecue and modern bistro concept
- Prepare ingredients and organise mise en place to support efficient kitchen operations during lunch, dinner, and peak trading periods
- Inspect food supplies and ingredients to ensure freshness, quality, and compliance with food safety standards
- Estimate food and labour costs, assist with portion control, and contribute to efficient stock usage and cost management
- Assist with stock rotation, inventory control, ordering requirements, and minimising food waste through effective kitchen practices
- Ensure all food preparation, storage, and kitchen operations comply with food safety legislation, workplace health and safety requirements, and hygiene standards
- Maintain cleanliness and organisation of kitchen workstations, food preparation areas, storage facilities, and kitchen equipment at all times
- Assist in training and supporting junior kitchen staff where required
- Maintain a positive, professional, and team-oriented working environment within the kitchen
- Contribute to delivering consistently high-quality food and an outstanding dining experience that reflects Bullrush Bistro's commitment to authentic Texas-style barbecue, premium ingredients, and excellent customer service
About you (requirements)
- Relevant qualification in Commercial Cookery, Hospitality, or a related field, or equivalent relevant industry experience
- Previous experience working as a Chef in a commercial kitchen, restaurant, bistro, hotel, smokehouse, or similar hospitality environment
- Sound knowledge of commercial food preparation, cooking techniques, kitchen operations, and food safety practices
- Ability to prepare high-quality dishes while working efficiently in a fast-paced kitchen environment
- Strong organisational skills, attention to detail, and ability to manage competing priorities during service
- Good communication and interpersonal skills with the ability to work effectively as part of a professional kitchen team
- Commitment to maintaining high standards of food quality, hygiene, workplace safety, and cleanliness
- Positive attitude, reliability, and a strong work ethic
- Flexibility to work evenings, weekends, and public holidays as required
