The Role
We're looking for an experienced and passionate Chef de Partie to join our team at Discovery Kings Canyon, where you'll work in one of Australia's most iconic destinations while helping deliver exceptional dining experiences to guests from around the world.
This is far more than your average kitchen role. Working alongside our Head Chef and Sous Chef, you'll have the opportunity to take ownership of your section, contribute to menu development, assist with ordering and stock control and mentor junior team members. The role will involve working in a busy, high-volume operation, catering for all staff meals during peak season, with a quieter pace during the off-season. The role primarily operates across daytime hours, providing a great balance of preparation and service.
What you'll be doing:

Prepare and present high-quality dishes across restaurant service and staff dining, ensuring consistency and exceptional presentation.

Work closely with the Head Chef on menu development, recipe preparation, ordering and stock control.

Monitor portion control, food quality, stock rotation and wastage to support cost-effective kitchen operations.

Supervise and support junior chefs, sharing knowledge and contributing to a positive team culture.

Maintain the highest standards of food safety, hygiene and cleanliness in line with Food Safety and HACCP requirements.

Assist with kitchen administration, stocktakes and ensuring smooth day-to-day kitchen operations.
Skills & Experience
-
Previous experience as a Chef de Partie, or an experienced Commis Chef ready to step into the next stage of your career.

Relevant trade qualifications in Commercial Cookery (or equivalent industry experience).

Experience working in fast-paced, high-volume kitchens, with remote, resort or tourism experience highly regarded.

Sound knowledge of food safety, hygiene practices and kitchen operations.

Strong organisational and time management skills with excellent attention to detail.

A proactive team player who takes pride in producing quality food and enjoys mentoring others.

A genuine passion for hospitality, creativity and delivering memorable dining experiences.
