About the Role
The role of a Sous Chef at Robbie’s Wine Bar involves supporting the head chef in delivering
high-quality, seasonal dishes in a fast-paced hospitality environment. Responsibilities
include assisting with menu preparation, maintaining food quality and consistency,
supervising kitchen staff, and ensuring compliance with food safety standards. The role also
requires strong teamwork, time management, and creativity, contributing to a share-style
dining experience that aligns with the venue’s focus on excellent food, wine, and customer
satisfaction. Robbie’s is open Thursday to Saturday evenings from 4pm onwards.
Position: Sous Chef
Location of work: 659-661, Burwood Road, Hawthorn East, Vic 3123
Employment type: Permanent, Full time (38 hours a week)
Salary Range: $75,000 to $85,000 plus guaranteed superannuation
Main Responsibilities:
● Assisting the Head Chef in planning, organising and supervising the daily operation of the
kitchen.
● Preparing, cooking and presenting high-quality meals in accordance with the restaurant’s
recipes and standards.
● Supervising food preparation during the service to ensure consistency, efficiency and
quality.
● Creating, plating and presenting dishes to the restaurant’s high presentation standards.
● Assisting in the development of new seasonal menus.
● Training, mentoring and supervising junior chefs, apprentices and kitchen hands in food
preparation, cooking techniques, plating and food safety procedures.
● Monitoring the performance of kitchen staff and ensuring compliance with restaurant
procedures.
● Managing kitchen workflow during busy service periods to ensure timely food preparation
and customer satisfaction.
● Monitoring food quality and ensuring all dishes meet the Robbie’s Wine Bar standards
before service.
● Maintaining strict compliance with Australian food safety, hygiene and sanitation
regulations.
● Managing stock levels and conducting weekly inventory checks.
● Receiving deliveries, checking product quality and ensuring correct storage of all
ingredients.
● Controlling stock rotation and minimising food waste through effective inventory
management.
● Assisting with kitchen rostering and coordinating daily kitchen operations.
● Ensuring compliance with workplace health and safety policies.
● Working closely with management to improve kitchen efficiency, food quality and customer
satisfaction.
Qualification and Experience:
● Diploma in Hospitality Management or equivalent qualification.
● Minimum 3 years’ experience in a similar role.
Skills and Competencies:
● Strong English and communication skills
● Strong leadership, problem-solving, customer service and organisational skills
● Detail-oriented individual with strong interpersonal skills and the ability to work with
diverse personnel, such as food vendors, cooks, managers, and servers
General:
● Must have valid qualifications and previous experience in a similar role
● Must be an Australian Citizen, Permanent Resident or hold a valid work permit or visa
