Job Summary
We are seeking a qualified Senior Cook who will directly report to the Head Chef and Chefs. The Senior Cook will be responsible for the daily operations of the kitchen and provide professional leadership and direction to junior staff where required. The Senior Cook is partially responsible for ensuring that recipes, preparation and presentation meet the restaurant’s specifications, as well as maintaining a consistent and high level of quality in line with the restaurant’s aims and expectations. In addition, the Senior Cook will need to have a strong understanding of hygiene and maintenance practices to ensure the kitchen remains safe, orderly, and sanitary.
Responsibilities
- preparing daily production list and assist with menu design; be responsible for the allocated section of the kitchen; receiving stock and manage allocated storage areas; ordering ingredients and food to maintain supply; maintaining stock levels in kitchen stations, including before and after service; preparing for service, including preparing food in advance through cleaning, cutting and marinating processes; preparing food in accordance with recipes throughout all parts of the preparation process; ensuring every customer’s dietary requirements are met; verifying portion sizes and matching prepared items against orders in order to limit wastage and ensure consistent quality and speed; ensuring excellent presentation of food; maintaining the kitchen through a clean-as-you-go approach; assisting Managers and senior Chefs to train staff; performing any other additional responsibilities as requested by the senior Chefs / Head Chef.
Qualifications
In order to apply for this role, you must have the following qualifications, knowledge, skills and experience:
- minimum Cert IV in Commercial Cookery; at least one years’ experience; excellent communication, interpersonal and rapport-building skills; sound knowledge of Japanese food and beverages including preparation methods; sound knowledge of the restaurant industry; and team-oriented attitude, with a proven track record of leadership and training.
