Bar Julius is a European-inspired, all-day lobby bar from morning coffee through to late-night cocktails.
Lottie is a rooftop Mexican restaurant and mezcaleria, celebrating bold flavours and agave-led drinks in a high-energy setting.
About the Role
You will lead by example while overseeing the full bar experience across both venues. This includes driving standards, developing menus, leading teams, and ensuring a consistently exceptional guest experience.
Your Day to Day
Lead day-to-day bar operations across both venues
Develop and evolve cocktail and beverage programs beside Group Bars Manager, Ben Ingall
Manage, train, and mentor bar teams
Oversee rostering, stock control, and cost management
Drive revenue
Collaborate with kitchen and front of house teams
Strengthen Lottie’s agave program and team trainings
Ensure compliance with RSA and licensing requirements
About You Proven experience as a Bar Manager or senior leader in a premium or high-volume venue
Strong knowledge of cocktails, wine, spirits, and agave
A hands-on leader who builds and develops strong teams
Experience managing costs and performance
Calm, adaptable, and confident across busy service environments
Excellent communication and a natural guest focus
Current RSA and full availability across a 7-day roster
