The role
We are seeking an experienced Baker to assist the daily production of our LoDe signature sourdough retail and wholesale production.
This is a hands-on position suited to a baker who thrives in a premium bakery environment and is a team player and thrives when working in close partnership with the Group Executive Chef and Lead Baker.
Key responsibilities
- Preparing and baking a wide variety of bread products, including but not limited to baguettes, multigrain breads, sandwich loaves, milk buns, shokupan loaves and artisan-style breads, in accordance with LoDe established recipes & quality standards.
- Mixing, kneading, fermenting, proving, and shaping doughs using appropriate techniques, both by hand and with commercial baking equipment.
- Monitoring baking processes by setting and controlling oven temperatures, baking times, and humidity levels to ensure consistent product quality and appearance.
- Hand-shaping loaves and baked goods and finishing products to required specifications prior to and after baking.
- Assisting in planning daily and weekly production requirements, including calculating quantities of dough and ingredients to minimise waste while meeting customer demand.
- Preparing workstations prior to production and ensuring all ingredients, tools, and equipment are ready for use.
- Operating bakery equipment such as mixers, ovens, proofers, and other machinery safely and efficiently.
- Maintaining high standards of cleanliness by routinely cleaning bakery tools, utensils, ovens, benches, and production areas in line with food safety and workplace hygiene regulations.
- Ensuring compliance with food safety standards, hygiene practices, and workplace health and safety requirements at all times.
- Monitoring stock levels of ingredients and baking supplies and assisting with ordering and replenishment as required.
- Assisting with general kitchen and food preparation tasks during peak periods when required.
- Working collaboratively with other bakery and kitchen staff to ensure smooth daily operations and timely production.
- Ability to work independently with minimal supervision as well as part of a team.
- Ensure bread quality, portion control and presentation standards are met.
- Maintain bakery cleanliness, organisation and hygiene compliance.
- Monitor stock levels, ordering and wastage control.
- Comply with all food safety, hygiene and WH&S requirements.
- Work collaboratively with BOH pastry team to production.

About you
You will bring:
- Minimum 2 years’ experience as a Baker or in a premium bakery environment
- Strong sourdough knowledge
- Experience working high-volume bread production and fast paced environment
- Ability to work independently and in a small, highly skilled team
- Strong communication skills and a collaborative mindset
- Passion for quality, consistency and thoughtful execution
