Head Chef – Carnarvon Gorge Wilderness Lodge

Carnarvon Gorge Wilderness Lodge is seeking an experienced and passionate Head Chef to lead our kitchen team at our remote wilderness resort in Central Queensland.
Located at the gateway to the stunning Carnarvon Gorge, our Lodge provides guests with a unique outback experience, combining comfortable accommodation, beautiful surroundings and quality dining. Our restaurant is open from April through to the end of October and we are looking for someone to start in 2027.
The Role
We are looking for a confident, hands-on Head Chef who can take responsibility for the day-to-day operation of our kitchen and deliver consistently high-quality meals to our guests.
You will be responsible for:
- Leading and supervising the kitchen team
- Planning menus and daily specials
- Food preparation and cooking to a high standard
- Maintaining food safety, hygiene and kitchen cleanliness
- Ordering stock and managing food costs and wastage
- Managing kitchen rosters and staff requirements
- Maintaining appropriate stock levels
- Ensuring smooth service during busy periods and group bookings
- Working closely with management and front-of-house staff
- Maintaining a positive and professional kitchen environment
About You
We are looking for someone who:
- Has proven experience as a Head Chef, Sous Chef or senior chef
- Has strong leadership and organisational skills
- Is confident working independently and managing a kitchen team
- Has excellent food preparation and cooking skills
- Understands food safety and workplace health and safety requirements
- Can work efficiently in a remote environment
- Is reliable, flexible and willing to be hands-on
- Takes pride in delivering excellent food and guest experiences
- Has a positive attitude and enjoys working as part of a small team
Experience in hospitality, remote resorts or high-volume/group catering would be highly regarded.
