The MiTCH (operated by Rum Rebellion Hospitality Group Pty Ltd, ABN 23 609 890 217) is a community-focused hotel and full-service dining venue at 50-52 Mitchell Road, Alexandria, Sydney NSW 2015.
We are seeking an experienced, qualified Sous Chef to join our kitchen brigade on a full-time, ongoing basis.
Salary: $80,000 to $90,000 per annum plus superannuation, commensurate with experience.
Duties and responsibilities:
- Plan and prepare menu items across all sections of a full-service kitchen
- Assist the Head Chef with menu development, costing and seasonal changes
- Supervise, train and roster kitchen staff; run the pass in the Head Chef's absence
- Monitor food quality, portion control, presentation and kitchen hygiene standards (HACCP)
- Manage ordering, stock rotation, supplier deliveries and stocktakes
- Ensure compliance with NSW food safety and WHS requirements
Requirements:
- Trade qualification in Commercial Cookery (Certificate III/IV or equivalent) or demonstrated equivalent experience
- Minimum 3 years' experience in a commercial full-service kitchen, including supervisory experience
- Full working rights in Australia OR eligibility for employer sponsorship
- Availability across evenings, weekends and public holidays
