Umi Sake Bar is a new Japanese restaurant and sake bar opening in Waverley. We are looking for an experienced and passionate Chef to join our team and help develop a high-quality Japanese dining experience for the local community.
Our concept combines fresh Japanese food with a relaxed neighbourhood dining atmosphere, offering sushi and sashimi alongside cooked Japanese dishes, chef specials and food designed to pair well with sake and drinks.
About the Role
As a Chef at Umi Sake Bar, you will be involved in both the preparation and development of our menu. We are looking for someone who takes pride in food quality, presentation and consistency and who is comfortable working in a professional but friendly kitchen environment.
Responsibilities include:
- Preparing and cooking high-quality Japanese dishes
- Assisting with menu development and seasonal specials
- Preparing sushi, sashimi and/or Japanese hot dishes depending on experience
- Maintaining consistency in taste, presentation and portion control
- Managing food preparation and kitchen workflow during service
- Monitoring stock, ordering and minimising food wastage
- Maintaining excellent food safety, hygiene and cleanliness standards
- Working closely with the owners and front-of-house team
- Helping establish efficient kitchen procedures as the restaurant grows
What We’re Looking For
- Previous chef experience in a Japanese restaurant or similar environment
- Good knowledge of Japanese ingredients and cooking techniques
- Sushi and sashimi experience is highly regarded
- Experience with Japanese hot food or modern Japanese/fusion cuisine is also highly regarded
- Strong attention to presentation and consistency
- Good understanding of food safety and kitchen hygiene
- Reliable, organised and able to work well in a small team
- Ability to work independently when required
- A positive attitude and genuine interest in Japanese cuisine
We are particularly interested in a chef who can bring ideas and creativity to the menu, rather than simply following an established production-style menu.
