Role Description
The Bakery Production Manager will oversee daily bakery production operations to include pastry production, bread production and wholesale baking, ensuring the consistent quality of handcrafted pastries, including managing a team of bakers and staff. Responsibilities include planning production schedules, managing inventory and suppliers, maintaining adherence to food safety standards, and optimizing workflow efficiency. The role involves hands-on supervision, including quality control checks and troubleshooting issues. Working with our Culinary Director this is a full-time, on-site position located in Sydney, NSW.
Qualifications
- Proven experience in bakery production, team management, and workflow coordination
- Expertise in pastry-making techniques, recipe adherence, and food safety compliance
- Strong communication, leadership, and team-building skills
- Experience in inventory management
- Ability to streamline production processes and maintain quality consistency
- Knowledge of traditional pastry-making and a passion for artisanal food is a plus
- Understanding of artisinal breads and doughs to include sourdough, brioches, italian dough and pastry doughs.
- Relevant certifications in food safety and/or culinary arts
