Maestro Hospitality is looking for an experienced and passionate Sous Chef to join the leadership team of a’Mare, our evolved Italian dining precinct at Crown Sydney.
Set harbourside in Barangaroo, a’Mare 2.0 brings together three distinct Italian experiences under one precinct:
a’Mare – our signature Italian dining destination, celebrating refined Italian hospitality and produce-led cooking.
Pizza’Mare – a vibrant and energetic expression of Italian pizza, pasta and relaxed dining.
Vista’Mare – our waterside destination for snacks, spritzes and effortless Italian aperitivo culture.
Together, they form an ambitious, high-volume Italian hospitality precinct driven by exceptional food, strong leadership and the warmth of Italian hospitality.
This is an opportunity for an accomplished Sous Chef to become an integral part of a highly skilled culinary team and help shape the next evolution of the precinct.
The Role
Working closely with the Executive Chef and Head Chef, you will play a key leadership role across the a’Mare 2.0 kitchen operation.
This is a hands-on position for a chef who thrives in a busy kitchen, leads from the front and takes pride in developing people while maintaining exceptional standards.
You will help oversee daily service, production and preparation across the precinct, ensuring consistency, quality and operational excellence across a complex seven-day operation.
You will also play an important role in mentoring the brigade, developing future leaders and creating a kitchen culture built around professionalism, accountability and a genuine passion for Italian food.

We are looking for someone who combines strong culinary foundations with confident kitchen leadership.
- Essential Requirements
- Full Australian working rights
- Formal commercial cookery qualifications
- Minimum 3 years’ experience in a kitchen leadership or management position
- Strong experience working with Italian cuisine
- Experience contributing to menu creation and development
- Strong understanding of kitchen cost control, labour management and stock management
- Experience operating within a high-volume, fast-paced kitchen
- Strong organisational and communication skills
- Exceptional attention to detail
- Professional presentation and grooming standards
- Food Handling Certificate
- Availability across a seven-day rotating roster

- First Aid Certificate
- Fresh pasta production experience
- Butchery skills
- Josper oven experience
- Strong fresh seafood knowledge and preparation skills
- Italian language skills – always a bonus
Key Responsibilities

Work alongside the Executive Chef and Head Chef to lead the kitchen brigade
- Lead by example during preparation and service
- Oversee food preparation, cooking, plating and presentation
- Maintain consistency and quality across all food offerings
- Support kitchen operations across a’Mare, Pizza’Mare and Vista’Mare
- Coordinate production kitchen and preparation workflows across the precinct
- Assist with ordering, inventory management and stock control
- Monitor food costs, labour costs and kitchen efficiencies
- Support rostering and workforce planning
- Maintain exceptional food safety, hygiene and WHS standards
- Train, coach and mentor junior and senior members of the brigade
- Identify emerging talent and support internal career progression
- Contribute to menu development and continuous improvement
- Help build a positive, disciplined and high-performing kitchen culture
- Support the continued evolution and success of the a’Mare - Italian dining precinct
