Located within The Brighton Hotel Precinct, SANDS Bar and COCO'S on the Beach offer two distinct dining experiences, giving our kitchen team the opportunity to work across a diverse range of food and service styles.
SANDS Bar is a stylish dining and lounge venue with stunning views across Botany Bay, serving fresh contemporary food designed for sharing, coastal flavours and Mediterranean-inspired dishes alongside signature cocktails.
COCO’S on The Beach is a lively beachfront sports bar featuring live sport, big screens, pool and a relaxed atmosphere, serving crowd-favourite food in a high-volume environment.
We’re looking for an experienced Chef de Partie to work across both venues.

Join the culinary team across Sands Bar and Coco’s on the Beach, with the opportunity to pick up consistent casual shifts across two very different venues within The Brighton Hotel Precinct.
With the flexibility to work around your existing commitments, this role is ideal for a Chef de Partie who enjoys variety, thrives in busy kitchens and wants the opportunity to develop their skills across different menus, kitchens and styles of service.
Future opportunities to gain more hours, or transition to a full-time role are also available, for the right candidate.
Key Responsibilities:
- Prepare and execute high-quality dishes across your allocated section
- Work across Sands Bar and Coco’s on the Beach, adapting to different menus and service styles
- Contribute to both à la carte and high-volume service
- Maintain consistency, presentation and high culinary standards throughout service
- Support smooth and efficient kitchen operations during busy periods
- Work collaboratively with the wider kitchen team across both venues
- Maintain strong food safety, hygiene and kitchen standards
- Assist with stock control, minimising wastage and maintaining kitchen organisation
About You:
- Previous experience as a Chef de Partie in a fast-paced kitchen
- Confident working across multiple sections, with a willingness to jump in where needed
- Experience in à la carte and/or high-volume service
- Strong focus on quality, consistency and attention to detail
- Organised, reliable and able to work calmly under pressure
- A genuine passion for food and developing your culinary skills
- Flexible availability, including nights and weekends
- Full Australian working rights required (no sponsorship is available for this position)
