About the role
Curry in Hurry is an established dual-concept restaurant in Lithgow, serving authentic Indian cuisine alongside a full fried chicken and burger menu across dine-in, pick-up and local delivery, seven days a week. We are seeking a qualified and experienced Cook to take full carriage of our kitchen — menu development, costing, and staff training and the quality and safety of everything we serve. This is a senior leadership position, not a line role.
Key duties
- Prepare and cook menu items across assigned sections — curry, tandoor, fryer and grill — to established recipes, portion sizes and presentation standards, under the direction of the Chef
- Prepare ingredients to the Chef’s specifications, including vegetables, meat, marinades, sauces and spice mixes
- Examine foodstuffs and ingredients on delivery and before use to ensure quality and freshness, and report any concerns to the Chef
- Regulate the temperature of ovens, grills, fryers, the tandoor and other cooking equipment
- Season food during cooking and adjust to the established house recipe
- Portion food, plate dishes, and add gravies, sauces, garnishes and accompaniments to specification
- Prepare food to meet special dietary and allergen requirements as directed
- Store food in temperature-controlled facilities, and label, date and rotate stock in accordance with the Food Standards Code
- Maintain the cleanliness and hygiene of the assigned section, equipment and storage areas, and complete temperature and cleaning records as directed
Essential requirements
- AQF Certificate III or Certificate IV in Commercial Cookery, or an equivalent overseas qualification; or a minimum of one year of full-time experience as a Cook in a commercial kitchen
- Demonstrated experience cooking Indian dishes, including tandoor cookery, curries and gravies, and Indian breads
- Demonstrated ability to work to set recipes, portion sizes and presentation standards without deviation
- Sound working knowledge of Australian food safety and hygiene requirements, including temperature control and allergen management
- Proven ability to work at pace across multiple sections during sustained peak service
- Availability for a rotating seven-day roster, and full and unrestricted working rights in Australia
Desirable
- Food Safety Supervisor certificate (NSW); experience in a high-volume kitchen servicing dine-in, pick-up and delivery orders concurrently
