Bayside's newest all day eatery.
Blanca is opening soon, bringing a relaxed European and Mediterranean dining experience to Bayside. From morning coffee and brunch through to afternoon drinks and vibrant evening dining, Blanca is designed to become a neighbourhood favourite.
Our evening menu will focus on simple, produce-driven food designed to share. Expect handmade pasta, premium steaks, fresh seafood, seasonal vegetables and quality ingredients cooked with restraint and respect. Our philosophy is simple: great produce, cooked well, in a warm and welcoming environment.
We're looking for a Head Chef who wants to build something from the ground up and take genuine ownership of a brand new kitchen.
The Role
This is a hands-on leadership position with a primary focus on our evening service.
You'll lead dinner service Wednesday through Saturday while overseeing the overall operation of the kitchen, ensuring our daytime offering maintains the same high standards of quality, consistency and presentation.
Your roster will be:
- Tuesday: Day shift dedicated to preparation, ordering, menu development, systems and supporting the daytime kitchen team.
- Wednesday to Saturday: Lead evening service.
Sundays and Mondays off.
Your Responsibilities
- Lead and inspire the kitchen team.
- Deliver consistently outstanding dinner service.
- Oversee the daytime kitchen operation and maintain consistency across all services.
- Collaborate on seasonal menu development.
- Maintain exceptional food quality and presentation.
- Manage ordering, stock control and food costs.
- Recruit, train and mentor kitchen staff.
- Build recipes, systems and procedures from day one.
- Maintain outstanding food safety and cleanliness standards.
About You
This role is ideal for someone who is passionate about food, enjoys building teams and understands that the best venues are created through collaboration.
You'll be working closely with experienced owner operators who are actively involved in the business and passionate about creating something special. This isn't a kitchen where decisions are made in isolation. We believe the best ideas come from working together.
We're looking for someone who enjoys contributing ideas, challenging concepts constructively and helping shape the venue from day one.
We're not looking for someone who believes they have all the answers or wants to dictate every aspect of the kitchen. Creativity is encouraged, but so is listening, adapting and working as part of a team.
The right person will be:
- An experienced Head Chef or Senior Sous Chef ready to step into a leadership role.
- Passionate about European and Mediterranean cooking.
- Creative, open-minded and eager to contribute ideas.
- Calm under pressure with excellent leadership skills.
- Organised, commercially aware and focused on consistency.
- Easy to work with, approachable and respectful.
- Excited by the opportunity to help build one of Bayside's newest dining destinations.
