Winthrop Hawker's Cafe has been a fixture of Perth's Asian dining scene for over 30 years. We serve authentic Malaysian, Singaporean, and Hong Kong hawker-style food - from Hainanese chicken rice and char kway teow to Cantonese congee, ho fun, and Hong Kong street classics - all made from scratch with real technique and real flavor.
We are looking for a skilled, experience full-time chef who knows Asian cuisine from the inside out and can hold the kitchen with confidence, consistency, and care.
You are responsible for planning, preparing, cooking, and presenting high-quality meals while ensuring efficient kitchen operations, food quality, and compliance with food safety requirements. The role involves menu planning, stock control, cost management, staff training, and maintaining high standards of food preparation and customer satisfaction.
Key Duties and Responsibilities
· Plan and develop menus to reflect customer preferences, seasonal availability, and business requirements.
· Discuss food preparation and service requirements with management, kitchen staff, and front-of-house staff to ensure efficient kitchen operations.
· Prepare, cook, and present menu items using a variety of cooking techniques while maintaining consistency, quality, and efficiency.
· Demonstrate cooking techniques and provide guidance to kitchen staff to maintain high food preparation and presentation standards.
· Monitor and control the quality of dishes throughout all stages of preparation, cooking, and presentation.
· Provide advice and support to kitchen staff on cooking procedures, food preparation methods, and kitchen operations.
· Monitor food storage, preservation, and stock rotation procedures to ensure food quality and minimise wastage.
· Check stock levels, estimate food requirements and labour costs, and place orders for food supplies and kitchen consumables.
· Assist in recruiting, supervising, and training kitchen staff to maintain high operational standards and service quality.
· Ensure compliance with food safety regulations and workplace health and safety procedures.
· Maintain a clean, safe, and hygienic kitchen environment at all times.
· Train and mentor junior kitchen staff in food preparation, cooking techniques, customer service expectations, and workplace procedures.
Skills and/or Qualifications Required
To have Trade Qualification in Cookery, or at least two years of relevant work experience
Base Annual Salary Range: $80k-$85k plus superannuation
